Note from Sabrina
I’ve given you all the tools to build the perfect S’mores no matter which cooking style that you choose. If you do choose to use an open flame, remember to be safe, only roasted over the embers and not an open flame, and to always keep your stick moving so the marshmallow doesn’t burn. Of course, make sure the kids stay a good distance away as well too.

About this Recipe
However you choose to make them, the best part is the melty marshmallow and chocolate all swirling together in the perfect “sandwich.” The basics have always been the same and rest assured, I won’t change that here. Graham crackers are broken in half and you lay the two halves on a plate, milk chocolate (which is by far the most popular type of chocolate, and it’s 2 rectangles if you’re using Hershey’s), and as much of your heated up marshmallow as you can stuff into the inside of the graham crackers are used to achieve the perfect sandwich. They are best if they are pressed down slightly and enjoy while warm and melted. If you love S’mores flavor and want to turn it into a party appetizer, you can also try my S’mores Cheeseball.
Can this be made ahead of time?
S’mores are best enjoyed fresh right after you make them but there are a few things that you can do if you want to save time. If you are using the oven method, you could prep this ahead of time on your baking sheet so it’s quick when you go to toss them in the oven. If you plan to use the microwave method, that can also be prepped in bowls ahead of time. For the stovetop and grilled method, you can prep you ingredients. You can pre-break the crackers, pre-break the chocolate pieces and set the marshmallows out into a bowl. This will be especially helpful if you have kids eating them because they don’t always have the most patience. Or, well, any at all.
How to Store
- Serve: All the ingredients for S’mores are stable at room temperature, so you don’t need to worry about refrigerating them.
- Store: An assembled S’mores will not keep well for a long period, so it is best to wait until serving to make them.
- Freeze: Marshmallows will last 3-4 months in the freezer. Defrost at room temperature and use to make fresh S’mores whenever you want!
Alternative Cooking Techniques
Oven Method
- Preheat your oven to broil.
- On a sheet pan add your graham cracker halves (leave an inch of space or so around the graham crackers as the marshmallows will expand).
- Top with the square of chocolate.
- Top the graham crackers with a marshmallow, either jet puffed size or jumbo.
- Place on a rack 5-6 inches below the top of the oven.
- Leave the door open 3-4 inches so you can peek in.
- Watch for 20-30 seconds for them to char and expand.
- Remove from the oven and cover with additional graham crackers and serve.
Microwave Method
- Note: The marshmallow won’t char with this method and you will want to eat it right away because the marshmallow will start to get tough with this method.
- On a microwave safe plate, add a graham cracker half and cover with square of chocolate bar.
- Top with a marshmallow of your choice.
- Microwave for 15 seconds.
- Top with second cracker half and enjoy immediately.
Stovetop Method
- Prep a cracker half topped with chocolate on a plate, set aside.
- Using a skewer. Turn a gas stove burner on high heat.
- Hold the marshmallow over the flame, not super close but close enough to start charring.
- Let the marshmallow catch fire for just a couple seconds before blowing out.
- Remove from heat and turn off the burner.
- Place the charred mallow over the chocolate and use the second graham cracker half to press it into the chocolate, while pulling out the skewer to remove.
Grilled Method
- On a plate add a couple graham cracker halves and cover with a square of chocolate each.
- Turn your grill onto high heat, Add a couple marshmallows to a long skewer.
- Once the grill is hot, hold the marshmallows over the surface but not touching it.
- Let the marshmallows char all over, rotating as needed, or let them catch fire for a couple of seconds before blowing them out.
- One at a time, remove by placing a marshmallow over a chocolate piece then press a second graham cracker over it while taking the skewer out.
- Repeat with the remaining mallows and cracker.
Variations
- Chocolate: You could use different chocolate variations to switch the flavors up a bit. You could use Hershey’s Dark Chocolate Bars, White Chocolate Bars, or even Cookes n’ Cream Bars. Kit-Kats, Reese’s Peanut Butter Cups, Rolos, Peppermint Patties or even Andes Mints would all be fun too!
- Marshmallows: You can leave the chocolate flavor classic and switch it up by using Homemade Marshmallows or flavored marshmallows, like Chocolate Marshmallows. You could even use Marshmallow Fluff instead. (You can use the store bought kind, but the homemade version is so much better!)
- Crackers & Cookies: You could use a variety of different crackers or cookies for this recipe. Scottish Shortbread Cookies, Oreos (you know I can’t leave them out), Fudge Stripe Cookies, Saltine Crackers, and even Ritz Crackers would work if you don’t have graham crackers or if you are looking for a different flavor profile.
- Fruit: Add some fresh fruit like sliced banana or strawberries. Raspberries would work well too. A dollop of Easy Strawberry Topping, Lemon Curd, or Raspberry Sauce would all be tasty and fun too!

Hi, what are the wooden skewers for? It doesn’t say anything about the wooden skewers in the recipe.
You can use them to heat up your marshmallows. Enjoy!
The chocolate doesn’t melt enough just from the heat of the charred marshmallow. How do you get the chocolate to melt more over a campfire?
Once I allow the marshmallows to catch fire for a couple of seconds, the chocolate melts with no issue from the heat.
Great fun with the kids on a cold snowy day, help the kids make S’mores in the fireplace , lot’s of fun
That does sound like a great way to spend a snow day.
I usually place my chocolate square on top of a graham cracker square and lay it on a piece of aluminum foil on the grill (NOT directly over the flame) while I toast my marshmallows. I take it off when the chocolate starts to melt, and the toasted marshmallow takes it the rest of the way.
should I use digestive biscuits or normal crackers cos where I’m from we don’t have graham crackers.
From what I can research, it looks like the digestive biscuit would be the closest to a graham cracker.
hi i love
where do you get graham crackers from in Singapore????
I’m not sure. Sorry!
